HEAVENSAKE is a composition by acclaimed French cellar master, Regis Camus and French entrepreneur Carl Hirschmann, in collaboration with Japan’s most respected sake breweries. HEAVENSAKE is the first Franco-Japanese sake collaboration made in Japan.

Camus unveiled HEAVENSAKE ‘s third expression, Junmai 12, on the French Riviera during the Monte Carlo Grand Prix weekend, on Saturday, May 25th 2019.

“Our desire and inspiration for HEAVENSAKE was to create sakes with a Mediterranean feel. Floral, light and fruity, evoking French joie de vivre.” “Launching Junmai 12 in the South of France came as a natural”, Camus says.

This Joie de Vivre came to life gathering HEAVENSAKE friends coming from around the world to see the iconic race. Notable guests of honor were A$AP Rocky, Stella Maxwell, Karolina Kurkova, Nusr’et the “Salt Bae”, Cirque du Soleil creator Guy Laliberte, Monaco Royal Pierre Casiraghi, Luka Sabbat and Moncler”s Chairman Remo Ruffini among others.

Junmai 12 is a collaboration between Regis Camus and Konishi Brewery located in the Hyogo prefecture in Japan and founded in 1550. Camus and Konishi toji -sake brew master- worked in tandem to create a sake that is elegant, refreshing, light, both savory and mineral.

“My inspiration was to make this third expression more rose-like, lower alcohol, around 12 degrees abv when traditional sakes are above 14 degrees: so the name of Junmai 12”. My challenge was to deliver the unparalleled elegance and signature flavor profile of HEAVENSAKE at lower abv; I am very proud of what we achieved with the team at Konishi”.

Junmai 12 is made to be enjoyed chilled and served in a wine glass, with a healthy meal. “Junmai 12 could also be sipped by the pool at a pool party like we did today”Hirschmann says. Very fresh and light it is a nice alternative to rose wine this summer.

“Junmai 12 pairs well with raw oysters, tuna tartare, poached fish, shrimp cocktails, sashimi and ceviche. Any meal with Umami flavors is a great association to; for instance, tomato and parmigiana Reggiano are rich in Umami flavor making pizza an unexpected yet delicious pairing” says Camus. For extra indulgence try a Napolitan Pizza topped with a spoon of sustainable caviar.

Junmai 12 was created for consumers with an active lifestyle in mind, eating healthy and looking at better wine and spirits alternatives. HEAVENSAKE only produces highly refined Junmai sakes. Junmai meaning pure, with no distilled alcohol added like in standard grade sakes. HEAVENSAKE is sulphite free, gluten free, additive free all natural, no added sugar, low acidity with three time less acidity than wine.

JUNMAI 12 retails $27.99 and is available starting June 2019.
