Maxime Frédéric, pastry chef at Cheval Blanc Paris, and his teams have come up with a bucolic Easter creation. To celebrate the arrival of spring, the pastry chefs invite you to stroll through a chocolate-flavored garden where the rose is king. Slow down the pace. Get closer. Feel. Observe. To be amazed. The rose in full bloom. With poetry, it unfolds its corolla and its silky petals in dark chocolate 75% from the workshop of the roaster-chocolate maker Nicolas Berger. They are to be picked delicately, with the fingertips, to discover the tender heart: a chocolate egg filled with caramelized hazelnuts and coated with chocolate. These come from Maxime Frédéric’s family farm, Le Secret de nos Vergers, in Normandy. Queen in her kingdom, the rose is enthroned in majesty on a delicate tablet filled with pistachios, raspberry jam and rose jam. An exceptional piece, like a flower arrangement, to be placed on the tables of gourmets.
